2 oz. whiskey
3/4 oz honey syrup *see Step 1 for this
3/4 oz lemon juice
Step 1: To make the honey syrup, combine 1 cup of honey and 1/3 cup of water into a small pot and heat over low heat until the honey dissolves and you have a liquid consistency. Let cool.
Step 2: Add the whiskey, honey syrup concoction, and the lemon juice in a cocktail shaker. Shake for about 15 seconds until the shaker is frosty.
Step 3: Strain into a glass with one large ice cube.
Over the weekend, Justin and I went over to my cousin’s house for a BBQ. Since I’m the “whiskey girl” it was up to me to decide what we would be drinking. The weather has been so beautiful lately so I wanted something that was crisp and refreshing but also not too sweet. The Gold Rush cocktail is exactly that.
Using only just a few ingredients, the Gold Rush cocktail is quick and easy to make. The most time-consuming portion is the honey syrup but it’s just because it requires you to turn on the stove. Don’t let that deter you from trying it though. The recipe only calls for 3/4 oz of syrup so you’ll have plenty for more than one cocktail later on if you choose.
Now, if you love a Hot Toddy, then I can almost guarantee that you’ll enjoy this drink. It’s very similar to a Hot Toddy since you’re using whiskey, water, honey, and lemon, except this is just a cold version of that. I like to just think of it as the Summer version of a classic Winter drink. Whether you’re in your backyard at a BBQ or at the lake enjoying the view, the Gold Rush cocktail is easily a drink to unwind with. Cheers!
