1.5 oz whiskey
1.25 oz pineapple juice (can or fresh will work)
1 oz simple syrup
2 dashes of bitters
Step 1: In a cocktail shaker add whiskey, pineapple juice, simple syrup and bitters. Fill the cocktail shaker with ice and shake for about 15 seconds.
Step 2: When the shaker becomes frosty, strain into glass.
It may still be Winter but this whiskey sunshine cocktail is giving me all of the Spring and Summer feels. I never thought a whiskey and pineapple combination could taste so good. I came across this cocktail as I was searching for good Winter cocktail recipes which is pretty ironic considering this is what I found. The original spin on this recipe includes simple syrup with spiced honey, cinnamon, and no ice. However, I decided to take out those “Winter” style ingredient, use regular simple syrup, and make it a cold. This instead gives it more of an island vibe.
The whiskey sunshine cocktail calls for minimal ingredients which makes it super easy to make. The tangy pineapple paired with the bitter whiskey creates a deliciously sweet yet not overpowering taste. As you may have learned by now, I’m not a fan of overly sweet cocktails and this has just the right balance. The bitters also help to tone down the sour pineapple taste which can sometimes be too tart. However, if you feel it’s still too bitter, definitely feel free to add more pineapple juice. It’s your cocktail after all.
I would say my favorite part about the whiskey sunshine is the frothy top that appears when everything is shaken. It sort of gives it an extra tropical feel. So if you’re looking for something to cheer you up during these Winter months and escape to Spring for a bit, the whiskey pineapple cocktail is a great start. Cheers and enjoy!
